Veggie & Chicken Quinoa

Hey Y'all!

When I came home to visit, my mom had just gotten on a Quinoa kick.  I had never tried quinoa, but I quickly fell in love.  I love it because quinoa takes on the flavor of what you cook it with making it very versatile.  We made this yummy Veggie & Chicken Quinoa that was so easy that I wanted to share it with y'all.


The first step is to cook the quinoa according to the package.  Personally, I like cooking a big batch in the rice cooker at the beginning of the week and then putting in the fridge until I need it!


Next, I added olive oil and minced garlic to a skillet.


To the olive oil and garlic, I added chopped up leftover chicken, carrots, spinach, broccoli, and tomatoes.


After stir frying the veggies, you add in the cooked quinoa and mix until it is hot.

This was so easy to cook and you can add or leave out anything you want!  If you didn't have leftover grilled chicken, you could just as easily stir fry the chicken until cooked before adding the veggies and quinoa.  I recommend adding a little bit of soy sauce. Yummy! 

I don't know about you other baseball ladies, but during season I have some requirements for dinner.
1) It is easy to make in a small kitchen with only the basic kitchen "gadgets" that make the packing list.
2) It is easy to cook for one or is good for two separate dinner times.

This recipe meets both of those requirements.  
All it takes is a knife, skillet, and spatula.
I can cook it for myself before I leave for the game, and then all the ingredients are prepped to stir fry again for Chris when we get home from the field late.
Plus it is really healthy.  It is a win win!

  1. I've never had quinoa. I've been meaning to branch out when it comes to recipes, I may have to try this!!
