Caprese Chicken

One of my June goals was to try two new recipes.  So the first I tried was a recipe for Caprese Chicken that I found on Pinterest.  I did things a little differently than the recipe below, but it was a good guide!

I started with these ingredients:
Balsamic Vinegar
Olive Oil
Chicken Breast

I started by cooking the chicken breast in olive oil, pepper, and garlic in a skillet.  The first side took about 10 minutes and the second side took about 8.

When the chicken was getting close to being done, I started some balsamic vinegar in a skillet with some sugar.  I let the balsamic reduce for about 10 minutes before removing it from the heat.  Next, I cut up some tomatoes and mozzarella.

When the chicken was done cooking, I put a slice of mozzarella, tomato, and a basil leaf on top and then drizzled the balsamic reduction on top!

I ended up with extra tomatoes and mozzarella so I made Tomato & Mozzarella salad with the extra!

This recipe had really good flavors, but I think I'm going to try cooking the chicken a different way next time.  I'll probably get Chris to grill the chicken and then add the mozzarella at the end so it gets really melted.  Cooking whole chicken breasts on the stove seems to make the chicken tough, plus I love the flavor of grilled chicken.  

It didn't help that the cottage is so small that anytime I cook on the stove the fire alarm goes off.  It was a little added stress having to fan around the fire alarm every few minutes!  I'm pretty sure I told Chris during the fire alarm going off that I wasn't cooking in this kitchen again... Dramatic wife moment I know.  So other than the fire alarm, this recipe was easy and pretty yummy!
