Corn Salsa

The Strattons could probably eat Chipotle twice a week and be happy! So I decided to come up with a copycat recipe of their yummy corn salsa.

I love a recipe that only has four ingredients:
2 cans white corn
Juice from 2 limes
Half of red onion, chopped
Cilantro, chopped

Drain the corn and add it to the bowl.  Add the juice of two limes.  Chop the cilantro and red onion and mix it with the corn and lime mixture.  Salt and pepper to taste.

I just serve this with tortilla chips as an appetizer or side.
