Grilled Balsamic Zucchini

I know that Fall isn't really known for grilling, but in Mississippi Fall is one of my favorite times to grill.  It isn't ridiculously hot and full of mosquitos, and the weather is actually enjoyable! So that is the reason for the grilled recipe.  We really loved this with some grilled chicken breasts one night, and thought it would be a fun recipe to share! Enjoy!

Grilled Balsamic Zucchini

What You Need:
Two Small Zucchini
1/4 Cup Olive Oil
1/4 Cup Balsamic Vinegar
1/2 teaspoon Sugar
Pepper to Taste

What You Do:
Cut the Zucchini in half and then in half again to have 8 long slices.
Place the sliced Zucchini in a ziplock bag with the combined olive oil, balsamic vinegar, and sugar.
Let the Zucchini marinade in the refrigerator for anywhere from one hour to four hours.
Grill for 2 to 3 minutes on each side and enjoy!
