Roasted Cabbage


Y'all, I love finding healthy things to cook on week nights! This is one of our new go-tos and will probably be making a weekly appearance until we get sick of it.  It is super simple and super tasty... Meet Roasted Cabbage!

It is really simple, first cut the cabbage into slices (about one-inch).  Place the cabbage slices on a cookie sheet sprayed with nonstick spray.  Then, brush each side of the cabbage with olive oil and sprinkle with garlic, salt, and pepper.  Then put the cabbage in a 400 degree oven for an hour, flipping the cabbage after 30 minutes.

The cabbage came out perfectly cooked and they crusty, brown edges were so yummy!  This is a really easy and healthy side that goes good with pretty much any meal.  We had it with grilled chicken and baked potatoes last week and it was perfect!
